These Banana Spelt muffins are incredibly moist, flavoursome and, like most of my favorite recipes; easy to whip up in a jiffy!
I use Spelt flour, which is an ancient cereal grain, that is easier to digest, and has a stronger nutritional profile than regular wheat flour.
As a healthier alternative to cane sugar, I have used Coconut Sugar and I find that this adds a certain molasses-type richness to the muffins.
Quick Banana Spelt Muffins
Prep time: 6 mins Total: 25 mins
3 or 4 ripe bananas, mashed
1/2 cup Coconut sugar
1 egg (slightly beaten)
1/3 cup coconut oil (could substitute melted butter)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cups spelt flour
:: Mix the mashed banana, sugar, egg and coconut oil together. Set aside.
:: Grab a separate bowl and mix the baking soda, baking powder, salt and spelt flour all together with a wooden spoon.
:: Combine the wet and dry ingredients together, being careful not to over-stir.
:: Pour into greased muffin tins and bake in a moderate oven.
:: Leave to cool for 10 minutes.
:: Mini muffins will take approximately 15 minutes. Regular sized about 20 minutes.
Sometimes I like to spike these with dark organic chocolate, but trust me – they are fabulous served straight up.
